Coconut and Red Curry Lentils
variation on an adaptable theme for you to peruse alongside some Black history.
Things you’ll need: red lentils, veggie stock, coconut milk, red curry paste (or any other curry really), optional turmeric, ginger, garlic, onion, other vegetables (sweet potato and spinach here, though zucchini or winter squash or whatever works), optional cilantro and toasted coconut. Oh yeah, also lime juice.
