things you’ll need: oil/butter, arborio rice, white wine, stock, peas, leeks, shallot/garlic/onion, lemon, salt, pepper, and parmesan.

incidentally gluten-free and vegetarian. found this recipe for vegan parmesan, which sounds great if you want to keep it dairy-free too. (not an endorsement, just a suggestion.)
