Roasted Potato and Asparagus Salad
while it’s still cool enough to use the oven
things you’ll need: yukon gold potatoes (because they are my favorite for roasting), asparagus, arugula, lemon (obvi), fresh dill, olive oil, a mustard (or two), a little mayo (optional, but I overdid the lemon, to no one’s surprise, and wanted to mellow it out a little), shallot, salt and pepper.
